Ingredients

  • 2 medium bananas speckled
  • 8 tablespoons unsalted butter melted and cooled (1 stick)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ cup mini chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners (or grease the wells).
  • In a large bowl, mash the speckled bananas. Stir in the melted butter, egg, and vanilla extract until well combined.
  • Stir in the granulated sugar.
