Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon salt
  • ½ cup granulated sugar
  • ¼ cup light brown sugar *firmly packed
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • ½ cup pecans *increase to one cup if making all your muffins with nuts. I do 6 with nuts, and 6 plain.

Instructions

  • Preheat oven to 400°F (204°C) and line a 12-count muffin tin with paper liners.
  • In a large bowl, mash the bananas. Stir in the melted butter, eggs, and vanilla, then mix in both sugars until smooth.
  • Gently fold in the flour, baking soda, baking powder, and cinnamon just until the flour disappears. Do not overmix. (At this stage, split the batter if desired: leave 6 plain and fold nuts into the remaining 6).
  • Divide batter evenly among the 12 cups. Bake at 400°F for 5 minutes, then reduce the temperature to 350°F (177°C) and bake for 15–16 minutes, or until a toothpick inserted in the center comes out clean. This allows the muffins to achieve the high dome tops.
  • Let cool in the pan for 5 minutes, then transfer to a wire rack.
