Ingredients

  • 48 wonton wrappers
  • 1 pound cooked shrimp chop extra large shrimp
  • 2 cups romaine lettuce
  • ½ cup caesar dressing
  • ¼ cup parmesan cheese
  • 1 teaspoon lemon juice
  • cracked black pepper to taste

Instructions

  • Set oven to 375°F (190°C).
  • Lightly grease a mini-muffin tin. Press two overlapping wonton wrappers into each slot.
  • Lightly mist with olive oil. Bake 8–10 mins until golden and crisp. Cool completely.
  • Toss shrimp, romaine, Parmesan, lemon, and dressing in a chilled bowl.
  • Spoon mixture into cups just before serving. Garnish with extra cheese.
