My kiddos love these easy to bake muffins because they are quick and easy for snack time, lunches, or meal prep. I typically double the batch and freeze any extras for days when I crave a sweet treat but don't want to break the calorie bank.

What is the Texture Like?

These two ingredient muffins have a dense, moist, spongey crumb. They don't bake up super high like traditional pumpkin muffins, and have a decent flavor. I loved them when I was doing Weight Watchers or simply watching my calories.

Devil's Food cake mix - (do not add water, eggs, or oil) this is the base for the muffins.

Canned Pumpkin Puree - (not pumpkin pie filling) this is what moistens the cake mix and helps these to bake up.

Can I use pumpkin pie filling instead of pumpkin puree?

No, it's not recommended. Pumpkin pie filling is pre-sweetened and spiced, which can make your muffins overly sweet and alter the flavor profile. Pumpkin puree is simply cooked pumpkin with no added ingredients.
