Having 15 chickens is such a blessing! We love our feathered friends and treat them well since they produce around a dozen of eggs for us per day. When we don't give them away, our eggs multiply quicker than we can use them. That is why we need recipes that use up extra eggs.

Sausage, Pepper, and Onion Egg Bites Ingredients
Eggs - The base of the recipe. They bind everything together and cook into a custard-like consistency.
Cottage Cheese - Adds protein, moisture, and a creamy texture to the egg bites. It helps to keep them from becoming dry and rubbery. This is also why you don't need milk for this recipe.
Salt & Pepper - Seasoning to enhance the flavors of the other ingredients.
Butter - Provides fat/flavor for sauteing the vegetables and sausage.
Maple Sausage Links - Adds savory flavor and protein. Slicing them into small pieces ensures even distribution throughout the egg bites.
Onion & Bell Pepper - Veggies that add flavor, texture, and color. They are sauteed in the butter before being mixed with the other ingredients.
Cheddar Cheese - Melts and adds a cheesy flavor throughout the egg bites.
Making Sausage Egg Bites
Preheat & Grease - Preheat oven to 350℉ and grease a muffin tin.
Blend - Blend eggs, cottage cheese, salt, and pepper until creamy.
Fill & Sauté - Add sausage, onions, peppers (sautéed or raw) to muffin cups. Fill ¾ full with egg mixture.
Bake & Top - Sprinkle with cheese and bake for 20-22 minutes until set.
Cool & Enjoy - Cool slightly before removing and top with fresh parsley (optional). Enjoy!

Sausage, Pepper, and Onion Egg Bites
Equipment
- 12-count Muffin Tin
- non-stick cooking spray
- oven adjusted to the center position
- blender
- measuring cups & spoons
Ingredients
- 12 large eggs
- ¾ cup cottage cheese
- salt & pepper to taste
- 1 tablespoon butter
- 6.4 ounces Banquet Maple Sausage Links sliced into small coins
- ½ cup onion
- ½ cup bell pepper
- ¾ cup cheddar
Instructions
- Preheat the oven to 350℉. Spray a 12-count muffin tin with nonstick baking spray; set aside.
- In a small skillet, melt butter. Add sausage coins, diced onions, and peppers and saute for about 5 minutes over low heat until onions are translucent and peppers are tender; set aside.
- In a blender, add 12 cracked large eggs, cottage cheese, salt, and pepper. Blend until creamy.
- Add an even amount of sausage, onions, and peppers to each muffin cup space.
- Fill each cup with egg mixture ¾ of the way.
- Sprinkle each with cheese.
- Bake for 20-22 minutes or until eggs are set and bites feel springy when gently depressed.
- Allow bites to cool for 5-10 minutes before gently removing them.
- Garnish with fresh parsley and enjoy!
